Vegan Green Bean Casserole Recipe: A Healthy and Tasty Dish for Everyone
Green Bean Casserole is a classic dish with a vegan twist. This recipe offers a delightful blend of green beans, mushrooms, and parsnips. It is perfect for those seeking a plant-based option. The dish is rich in flavour, thanks to the caramelised onions and nutritional yeast. This casserole is not only delicious but also easy to prepare, making it an excellent choice for any meal.
- ¼ cup nutritional yeast
- ½ tsp crushed red pepper
- 1 red onion, sliced
- 1 tbsp coconut oil
- 1 ½ tsp salt
- 1 ½ cups water
- 1 ½ cups mushrooms, chopped
- 1 ½ lb green beans
- 2 cups parsnips, chopped
- 3 cloves garlic, minced
- Pepper to taste

- Steamer
- Baking dish (8x8-inch)
- Blender
- Oven
Preparation
- Add ½ tablespoon of coconut oil to a wide-bottomed saucepan and set to low heat. Add the onions and cook for 30 minutes, stirring occasionally to caramelise. If they look dry, splash a bit of water into the pan.
- Steam the parsnips for about 10 minutes. Set aside and let them cool.
- Remove the ends of the green beans and cut them into 2-inch pieces. Steam them for 8 minutes. Set them aside in an 8x8-inch baking dish.
- Once the onions have caramelised, set them aside. Sauté the mushrooms in the same pan for one minute.
- Add garlic and stir for another five minutes.
- Add half of the garlic and mushroom mixture to the green beans.
- Preheat the oven to 350°F (175°C).
- Put the other half of the garlic and mushroom mixture, as well as the steamed parsnips in a blender. Add nutritional yeast, salt, pepper, and red pepper. Blend until smooth.
- Pour the blended mixture over the mushrooms and green beans. Stir to coat, and top with caramelised onions.
- Bake for 30 minutes.
- Serve warm.
